Easy Cauliflower Rice
Took me 15 min to make this cauliflower “rice” dish and no crazy cauliflower clean up thanx to finding these cauliflower pearls! It’s been an extra busy few weeks for me and that’s when it’s so tempting to not eat well… something as simple as pre cut Cauli can make all the difference😄 since cutting and processing your Cauli is really the only difficult part of making this.
Simply warm up some olive oil or coconut oil in a large frying pan over medium heat, then add your finely chopped cauliflower and diced onion and cover. Sauté for around 10 min then add other veggies or cashews for another 5-10 min OR season and eat as/is. For this dish I added chopped purple cabbage, green onion and mushrooms and topped with nutritional yeast and lots of salt and pepper.
